Pumpkin, Sunflower, and Chia Seed Granola Bar

Ingredients (makes 8 bars):

  • 6 oz Old Fashioned Oatmeal
  • 1 1/2 oz Pumpkin Seeds
  • 1 1/2 oz Sunflower Seeds, Roasted, Unsalted
  • 1 1/2 oz Golden Raisins
  • 1 oz Dried Cranberries
  • 1/4 cup Maple Syrup
  • 1/4 cup Brown Sugar, Light
  • 1/4 tsp Vanilla Extract
  • 1/2 tsp Cinnamon, Ground
  • 1/4 tsp Salt
  • 2 Tbsp Chia Seeds
  • 1/4 tsp Canola Oil

Directions:

Preheat oven to 350F degrees. Place rolled oats on a pan and roast until toasted, about 15 minutes. Remove and place in a bowl.

Place sunflower and pumpkin seeds on a separate pan and roast for 15- 20 minutes until golden brown and fragrant. Remove from oven and chill. Place seeds in a food processor and pulse until coarsely chopped; place into bowl with the oats.

Place dried fruits in the food processor until ground and sticky. Add to the bowl with oat and seed mixture. Stir to combine evenly.

Place maple syrup and brown sugar into a pot and bring to a simmer, stir to melt the sugar and bring to a boil. Remove from heat and add vanilla extract and ground cinnamon. While still hot, pour into the bowl with the oats and add salt and chia seeds. Stir until well combined, using a spatula.

Lightly brush oil on a pan to prevent sticking and pour the granola mixture into the pan. Using a piece of parchment paper between your hands and the granola, press firmly to smooth out and even the top. When cooled, flip out the granola bars onto a cutting board and cut into 2 oz squares. Store at room temperature.

Portion size: 1 granola bar (approximately 2 oz)

What our clients are saying

“I just wanted to express my thanks and give two thumbs up for the updates to our lunch menu. My selections have been quite tasty—corned beef Reuben, jambalaya—and I appreciate that, too! I am looking forward to trying some new items in the coming weeks. Keep up the good work!”

“What a wonderful dinner we had tonight for our international families. The food was delicious and well presented as well.”

“Thanks so much for a great week of food here at SCH to start off 2021. Everything has been fantastic. The kids were loving the Chinese food and boxes today. The Moo Shu Pork was amazing. Great work!”

“The roasted tofu/noodle/edamame arugula salad with cabbage, carrots and red peppers was something that I would buy from a restaurant or food truck without question. It would win best school lunch in the U.S. without a doubt if there was such a competition! The textures and flavors were a perfect blend, tied together by an excellent dressing. I don't think anyone would be mad if that popped up on the menu every week. Thanks again to you and your staff for such high-quality food!”

“I wanted to let you know that for this entire school year I have been so well fed! I LOVE LOVE LOVE LOVE all the diversity of salad choices we have each day and the amazing entrees.  My favorites are the carnitas, chili, curry, and cajun chicken days.  I am so grateful for all the care that goes into the food because I know I do not eat enough vegetables or balanced meals without you and your crew's work.  Thank you so much!  You take such great care of us!!”

“We were totally impressed by the presentation and care in which these new team members were brought into the CulinArt family. So happy we made the decision to choose CulinArt Group.”

“Thank You! Chef Budd [and team], you overcame a new online ordering system (and hundreds of labels daily!), provided creative and healthy menus, continued to connect with local farmers to incorporate locally sourced ingredients, and worked tirelessly to serve the school community on three campuses.  While it feels like you are all a little like the Wizard of Oz right now, working behind a curtain in a kitchen far away, we sense your smiles and your passion to deliver the best possible service during these trying times. We are all so grateful!”

“We want to take a moment to celebrate all the employees who worked on the front lines during unprecedented times. Your efforts and dedication to going above and beyond are noticed and appreciated. Thank you for being the heart and soul of CulinArt Group. We couldn’t do this without you. Chef Jay and Chef Paul have been so awesome in the Hubbell Café.  There has been significant change, but they take it in stride and keep the delicious food coming.  We truly appreciate them!”

“Thank you and your staff for all the care and thought you give CSW adults and students. You approach events with such care and elegance- I don’t know how you do it! Especially day after day. Please thank all your staff for their wonderful work and kind manner with all of us. Here is to a great year!”

“I will say that CulinArt has always been a very collaborative partner to T. Rowe Price, listening to our current needs and future goals and suggesting realistic and achievable strategies to meet those goals.  2020 was obviously no exception.  CulinArt also altered other areas of our OCS and pantry programs to create safer environments for all our associates. We can only thank you for your continued flexibility and innovative ideas through these difficult times.”
