RECIPE: Quinoa Veggie Avocado Stuffed Tomatoes

For the final week of National Blood Pressure Month, we are giving you one more DASH friendly recipe! This stuffed tomato is packed with plant based protein from quinoa, tons of color (which means vitamins and minerals) from all of the veggies, and a good source of heart healthy fats from the avocado.

Quinoa Veggie Avocado Stuffed Tomatoes

Ingredients (makes 12 servings):

  • 3 quarts Vegetable stock
  • 12 Tomatoes
  • 1 ½ cup Red onion, chopped
  • 3 cups Quinoa, dry
  • ¾ cup Green bell pepper, chopped
  • ¾ cup Red bell pepper, chopped
  • ¾ cup Eggplant, diced
  • ¾ cup Carrots, diced
  • 1 ½ tsp Canola oil
  • ½ Avocado, diced
  • 1 ½ Tbsp Ground pepper
  • ¾ cup Parsley, fresh, chopped

Directions

  1. Preheat oven to 350 degrees F.
  2. Cut the tops off of the tomatoes and hollow out the insides.
  3. Heat oil in a saucepan over medium-high heat. Add onions and cook until they begin to soften, about 1-2 minutes.
  4. Add bell peppers, eggplant, and carrots and sauté until tender, approximately 2-3 minutes.
  5. Add quinoa and cook gently for 2 minutes.
  6. Add the stock to the quinoa and vegetable mixture. Bring to a boil then reduce heat to a simmer and cover. Cook until the quinoa has absorbed all of the liquid is fully cooked, about 7-10 minutes. When quinoa is cooked, remove the cover and fluff quinoa with a fork.
  7. Gently mix in the avocado, pepper, and parsley.
  8. Carefully stuff about ¾ cup quinoa into each tomato.
  9. Place tomatoes on a baking sheet and bake until tomatoes are heated through, about 15-20 minutes.

What our clients are saying

“I just wanted to touch base as another school year draws to end. I cannot thank you enough for how smoothly this year went. Chef Felix [Herrera] and his staff made it seamless in a year with lots of wrinkles.    ”

“Many, and I do mean many, thanks for a great Parents Weekend.  I heard from so many happy parents and you all work very hard to make it happen.  In gratitude and kindness…”

“Thank you and your staff for all the care and thought you give CSW adults and students. You approach events with such care and elegance- I don’t know how you do it! Especially day after day. Please thank all your staff for their wonderful work and kind manner with all of us. Here is to a great year!”

“Thank you for including me today in the food waste demonstration/[chef competition] and flattering me with the role of “judge.” I will proudly don the [Stop Food Waste Day] apron the next time I plan an “event” in our own kitchen. I think this is a very worthwhile cause and the statistics you read off are staggering. They, alone, can intimidate a home chef, let alone be the “driver’ for a professional one.”

“I ALWAYS feel spoiled by the meal offerings at CSW (The Cambridge School of Weston) and am entirely grateful for it. As I eat today's delicious and lavish lunch (and think about yesterday's as well), I can't tell you how much I feel so well cared for here, both with the food and by the dining hall staff. CSW cares for us in so many ways, both big and small.”

“We are so thankful and so impressed by your immediate attention to our power outage. It was such a relief to see all the equipment and workers coming in within a few hours of the outage. Thank you for serving dinner to all [the] students in a very difficult circumstance. Please extend our thanks to your workers who braved cold weather to grill hamburgers and hotdogs.”

“This has been a year of unprecedented uncertainty, but through it all, Denee, chef Darby, Samantha, and the whole CulinArt team, provided the best dining experience the school has had in my thirteen year tenure.  It was an absolute pleasure to work with them, and I can't wait for next year when the craziness of COVID brings everyone back into the dining hall for meals. We look forward to working with Denee, Chef Darby, Samantha, and the rest of the CulinArt team again next year.”

“Thank You! Chef Budd [and team], you overcame a new online ordering system (and hundreds of labels daily!), provided creative and healthy menus, continued to connect with local farmers to incorporate locally sourced ingredients, and worked tirelessly to serve the school community on three campuses.  While it feels like you are all a little like the Wizard of Oz right now, working behind a curtain in a kitchen far away, we sense your smiles and your passion to deliver the best possible service during these trying times. We are all so grateful!”

“I have really appreciated the wonderful cafeteria staff we have via Culinart and the thoughtful meals they provide our kids. They're truly one in a million. I have also really appreciated the dedication Parker and CulinArt share to sustainability and green practices on campus. I am so thankful that Parker has chosen CulinArt, a company that shares Parker values, and that they took the time and effort at such a hard time to make sure that Parker is always on the forefront of green practices and safety - never compromising.”

“We appreciate the excellent service that is a hallmark of the Chadwick Culinart team. You all are such professionals - and you always deliver your service in such a pleasant manner! Thank you for everything you do to help make the Village events successful. We greatly appreciate your talents, efforts, and kindness.”
