RECIPE: Watermelon Feta Salad

All month we have been discussing the different flavors and which flavors pair well together. This week we have a flavor bursting recipe for you! This Watermelon Feta Salad combines sweet, bitter, and umami all in one. Try this healthy recipe packed with vitamins and minerals that your taste buds will love.

Watermelon Feta Salad

Ingredients (makes 4 servings):

Salad

  • 8 oz Arugula
  • 8 oz Watermelon, cubed 1/2″
  • 4 oz Feta cheese, crumbled

Vinaigrette

  • 1 1/4 tsp Dijon mustard
  • 1/2 tsp Lemon juice
  • 1 Tbsp Balsamic vinegar
  • 2 1/2 tsp Water
  • 1 clove Roasted garlic
  • 1/4 tsp Honey
  • 1/4 tsp Salt
  • 1/8 tsp Ground black pepper
  • 1/2 tsp Parsley, fresh, chopped
  • 1/4 cup Olive oil

Directions:

  1. Prepare Vinaigrette: In a large bowl, add mustard, honey, lemon juice, vinegar, water, and garlic. Puree until smooth with an immersion blender, blender, or food processor. Slowly add in oil, season with salt, pepper, and parsley. Cover and store in the refrigerator until ready to serve.
  2. Prepare Salad: Layer salad with fresh arugula, watermelon, and feta. Drizzle vinaigrette on top and serve.
