When it comes to avocados, guacamole recipes get all of the attention – so we’re switching it up! Avocados are extremely versatile and can be enjoyed for breakfast, lunch, dinner, and even dessert. Today we are sharing one of our favorite avocado dessert recipes – a quick, simple, and healthy dessert recipe that highlights the greatness of avocados.
Chocolate Avocado Chia Pudding
Yields 8 servings
2/3 cup maple syrup
2/3 cup cocoa
2 tsp vanilla extract
4 tbsp coconut oil
2 tbsp chia seeds
Combine all ingredients in a blender and blend until smooth, mixing as necessary.
Divide pudding into ramekins or cups and refrigerate for at least 30 minutes before serving to allow the chia seeds to thicken.
This recipe, besides being tasty, is also a good source of healthy fats and fiber form both the avocados and chia seeds. Store this pudding in the refrigerator for a future sweet treat, or enjoy right away.
