RECIPE: Mushroom Bruschetta
Mushrooms have a hearty “umami” flavor making them tasty additions to any dish. Grill them, sauté them, blend them into burgers, or try out this recipe! This Mushroom Bruschetta is simple, easy, and won’t disappoint – you won’t even miss the tomatoes. Layer it on top of a sandwich, garnish a salad, or just enjoy it on some toasted bread.
Mushroom Bruschetta
Ingredients (makes 12, 2oz portions):
- 2 cups button mushrooms, diced
- ½ cup balsamic vinegar
- 1 cup canola oil
- 4 oz garlic, minced
- ½ tsp salt
- ½ tsp black pepper
- 1 cup parsley, chopped
Directions:
- Preheat oven to 400 degrees F.
- Place mushrooms on a roasting pan and roast in the oven for 10-15 minutes. Remove from the oven and allow the mushrooms to cool.
- Combine mushrooms with balsamic vinegar, oil, garlic, salt, pepper, and parsley. Toss to combine. Let the flavors meld for at least 20 minutes before serving.
