Throughout July, we are highlighting the greatness that is Summer produce. This recipe includes many seasonal summer items like spinach, berries, and melon. Mix them all together and you have one tasty, refreshing, Summer Superfood Salad.
Blueberry, Cantaloupe, Spinach Salad with Feta and Spiced Pepitas
Ingredients (makes 4 servings):
- ½ cup Pumpkin seeds
- 1 tsp Cajun blackened seasoning
- ¼ tsp Olive oil
- 12 oz Spinach
- 2 cup Blueberries
- 1 cup Cantaloupe, diced
- ¼ cup Feta, crumbled
- ¼ cup Balsamic vinaigrette
- 1 oz Basil, fresh
- Preheat the oven to 350 degrees F. Toss pumpkin seeds in oil and Cajun seasoning and place on a sheet tray and toast until golden brown and just becoming fragrant – about 3-5 minutes. Remove from the oven and set aside to cool.
- In a large bowl, toss together spinach, blueberries, cantaloupe, feta cheese, balsamic vinaigrette, and basil. Garnish with pumpkin seeds before serving.
